In the vineyard: roots in limestone, vision in labor
Puddinga is named after the conglomerate limestone rock — known as “puddinga” — that defines the soil at Il Vecchio Poggio, embracing the roots of the vines. The Cabernet Sauvignon grows in this harsh yet mineral-rich environment, pushing deep into the earth. Vineyard work is organic and artisanal, with minimal interventions, natural balance, and thoughtful farming choices. Everything is guided by listening to the vineyard, where human effort and natural rhythm meet.
In the cellar: patience, amphora, authenticity
Harvested at full ripeness, the Cabernet Sauvignon is gently crushed and macerated for 10–12 days with 2–3 daily pump-overs. After a soft pressing and coarse racking, malolactic fermentation takes place in steel, followed by 24 months of aging in Tava amphorae. The amphora, like the puddinga rock, is not a trend but a symbol of purity and ancient simplicity, embodying the estate’s desire to craft wines of honesty, clarity, and character.

Fermentations occur spontaneously, without additives or technological interference, allowing each vintage to express itself freely. Wines are vinified in steel, concrete, or fiberglass tanks, and aged slowly according to their natural rhythms. No filtering or fining is applied, and sulfur is used only in minimal quantities, if at all. The resulting wines are alive and authentic, with a distinctly Tuscan voice — sincere, rustic, yet always elegant.
