Wine History
The Marsannay Rouge cuvée embodies Sylvain Pataille’s vision to restore prestige to the Marsannay appellation – the only one in the Côte de Nuits that produces red, white, and rosé wines. From the beginning, Pataille has sought to express the soul of this terroir through meticulous and transparent winemaking. The vines, aged between thirty and fifty years, grow on marl and limestone soils rich in minerals and well-drained structures. The 2023 harvest was carried out entirely by hand, selecting only the healthiest, perfectly ripe grapes – a reflection of the estate’s precision and authenticity.
Philosophy in the Vineyard
Sylvain Pataille practices organic and biodynamic viticulture, avoiding synthetic chemicals and limiting soil compaction through light manual work. The goal is to maintain a natural balance between vine, soil, and ecosystem. Canopy management and low yields help produce concentrated, healthy grapes rich in aromatic complexity. The clay-limestone soils of Marsannay impart structure and tension, while altitude and exposure preserve acidity and freshness. Every action in the vineyard aims to preserve the genuine voice of the terroir.
Approach in the Cellar
In the cellar, Pataille follows a philosophy of minimal intervention and maximum expression. Fermentations occur spontaneously with native yeasts in wooden or stainless-steel vats, with minimal temperature control. A portion of whole clusters is used to enhance aromatic complexity and energy. Extraction is gentle and gradual, allowing for fine tannins and a balanced texture. The wine ages for about 18–24 months in French oak barrels, of which only a small fraction are new. No heavy filtration or clarification is performed, preserving the natural integrity and elegance of the wine.

The Sylvain Pataille Winery was born in the heart of Marsannay-la-Côte, in the Côte de Nuits, one of Burgundy’s most fascinating regions. Founded in the early 2000s, the estate represents the vision of an oenologist trained among the greatest names of the region, determined to rediscover Marsannay’s authentic identity. Sylvain, a true son of Burgundy, began with just a few hectares and an uncommon determination: to give voice back to the terroir. Over the years, the estate grew to become a symbol of a new generation of independent winemakers, capable of combining tradition, technical precision, and ecological awareness. Each harvest is a testament to a coherent journey rooted in patient observation of nature and a deep understanding of the soil.
