Wine History
The name “Le Chapitre” dates back to the Middle Ages, when these lands belonged to the chapter of the cathedral of Dijon. This ancient parcel, with its limestone and clay soils, gives the Chardonnay both structure and finesse. Recognized as one of the finest crus of Marsannay, Sylvain Pataille has chosen to bottle it separately, revealing the depth and nobility of its terroir. The result is proof that the Côte de Nuits can craft great whites worthy of comparison with the finest in Burgundy.
Vineyard Philosophy
Pataille practices biodynamic viticulture, guided by the rhythm of the earth and the vine. The old vines grow on poor, limestone-rich soils that yield naturally low yields and concentrated fruit. Each operation in the vineyard is manual, and no synthetic products are used. His approach preserves biodiversity and the authentic character of the terroir, allowing the Chardonnay to express tension, minerality, and precision in perfect balance.
Winemaking Approach
Fermentation occurs spontaneously with native yeasts, ensuring authenticity and depth. The wine is aged for around twelve months in French oak barrels of medium size, second and third use, allowing gentle oxygenation and subtle complexity. The oak never dominates but supports the natural purity of the fruit. Pataille intervenes minimally, preferring time and gravity to shape the wine’s texture and harmony.

The History of Sylvain Pataille
The Sylvain Pataille Winery was born in the heart of Marsannay-la-Côte, in the Côte de Nuits, one of Burgundy’s most fascinating regions. Founded in the early 2000s, the estate represents the vision of an oenologist trained among the greatest names of the region, determined to rediscover Marsannay’s authentic identity. Sylvain, a true son of Burgundy, began with just a few hectares and an uncommon determination: to give voice back to the terroir. Over the years, the estate grew to become a symbol of a new generation of independent winemakers, capable of combining tradition, technical precision, and ecological awareness. Each harvest is a testament to a coherent journey rooted in patient observation of nature and a deep understanding of the soil.
Philosophy in the Vineyard
In the vineyards, Sylvain Pataille follows an approach of organic and biodynamic viticulture, certified and deeply respectful of natural balance. The vines, some over fifty years old, are cared for with artisanal dedication, avoiding synthetic chemicals and favouring natural treatments. The goal is to preserve soil life and enhance the expression of Marsannay’s terroir — a mosaic of marl and limestone capable of producing complex and profound wines. Pruning, soil management, and controlled yields lead to healthy, concentrated grapes in which the beauty of Pinot Noir and Chardonnay finds its purest, most authentic form.
Approach in the Cellar
Inside the cellar, Sylvain Pataille’s philosophy is clear: intervene as little as possible to express as much as possible. Fermentations occur with native yeasts, and temperature control is minimal to respect the natural evolution of the wine. Macerations are extended gently, allowing a slow and harmonious extraction of tannins. Vinifications take place in wooden and steel vats, followed by ageing in used oak barrels to respect fruit purity. Each wine is bottled without heavy filtration or clarification, preserving aromatic integrity and original structure. Meticulous attention to detail makes every cuvée an honest reflection of its place of origin.

Today, Sylvain Pataille is recognised as one of the great interpreters of contemporary Burgundian terroir.
