The History of Sylvain Pataille
The Sylvain Pataille Winery was born in the heart of Marsannay-la-Côte, in the Côte de Nuits, one of Burgundy’s most fascinating regions. Founded in the early 2000s, the estate represents the vision of an oenologist trained among the greatest names of the region, determined to rediscover Marsannay’s authentic identity. Sylvain, a true son of Burgundy, began with just a few hectares and an uncommon determination: to give voice back to the terroir. Over the years, the estate grew to become a symbol of a new generation of independent winemakers, capable of combining tradition, technical precision, and ecological awareness. Each harvest is a testament to a coherent journey rooted in patient observation of nature and a deep understanding of the soil.
Philosophy in the Vineyard
In the vineyards, Sylvain Pataille follows an approach of organic and biodynamic viticulture, certified and deeply respectful of natural balance. The vines, some over fifty years old, are cared for with artisanal dedication, avoiding synthetic chemicals and favouring natural treatments. The goal is to preserve soil life and enhance the expression of Marsannay’s terroir — a mosaic of marl and limestone capable of producing complex and profound wines. Approach in the Cellar
Inside the cellar, Sylvain Pataille’s philosophy is clear: intervene as little as possible to express as much as possible. Fermentations occur with native yeasts, and temperature control is minimal to respect the natural evolution of the wine. Macerations are extended gently, allowing a slow and harmonious extraction of tannins. Vinifications take place in wooden and steel vats, followed by ageing in used oak barrels to respect fruit purity. Each wine is bottled without heavy filtration or clarification, preserving aromatic integrity and original structure.
