History of the wine
Pinot Blanc has a long-standing tradition in Germany, and within Rheinhessen it takes on a unique character thanks to the calcareous soils of Dienheimer Tafelstein. These vines, planted three decades ago, have been meticulously cared for by the Kissinger family, making them a true heritage of the estate. In recent years, Moritz Kissinger decided to vinify and bottle this Pinot Blanc separately, in order to highlight its distinctive character. The 2022 vintage, harvested manually on September 7th, stands out for its balance and expressive fruit. With only 1,056 bottles produced, it perfectly illustrates the philosophy of small-scale winemaking: limited quantity, but exceptional quality. Each bottle is the result of careful vineyard work and minimal intervention in the cellar, aiming to preserve authenticity above all.
Philosophy in the vineyard
The Dienheimer Tafelstein vineyard is characterized by chalky-limestone soils, which imprint a unique freshness and minerality into the wine. Here, biodynamic principles guide every practice, ensuring the balance of the ecosystem and the vitality of the vines. The 30-year-old Pinot Blanc vines are cultivated with the utmost respect, without the use of chemicals, relying instead on natural preparations and manual work. Harvest is done entirely by hand, allowing for careful selection of the healthiest and ripest grapes. This approach not only preserves the purity of the fruit but also reflects a deep connection to the land. By focusing on harmony between soil, climate, and plant, Moritz Kissinger ensures that each vintage mirrors the natural rhythms of its terroir.
Winemaking approach
In the cellar, the goal is to maintain authenticity and purity. Grapes undergo direct pressing, avoiding aggressive extraction in order to capture finesse. Fermentation occurs spontaneously with native yeasts in small 228-liter oak barrels, allowing slow and natural development. Ageing is split between 12 months in oak barrels and 6 months in stainless steel tanks, combining complexity and freshness. No fining or filtration is carried out, preserving the wine’s full body and character. A minimal addition of sulfur, around 20 mg/L, ensures stability while keeping the wine as unmanipulated as possible. The result is a Pinot Blanc that reflects both tradition and modern minimal-intervention winemaking.

The history of Moritz Kissinger
The journey of Moritz Kissinger, a young winemaker from Uelversheim, is deeply rooted in the family tradition of Weingut Kissinger. Growing up among vines and barrels, Moritz developed a strong passion for wine that led him to study agronomy and later attend the prestigious Geisenheim University of Viticulture and Enology. Before returning to the family estate, he gained valuable experience working with two renowned wineries, both committed to organic and biodynamic philosophies. In 2018, he vinified his first wines under his own name, producing three barrels of Chardonnay from carefully selected family parcels, marking the beginning of a personal project that blends tradition and innovation.
Vineyard philosophy
Moritz’s approach in the vineyard is based on respect for nature and soil vitality. The 12 hectares of family vineyards are cultivated according to biodynamic principles, avoiding invasive practices. Only the most suitable plots, rich in chalk and clay, are chosen for his signature wines. The main grape varieties include Pinot Blanc, Chardonnay, and the iconic Riesling, the symbol of Rheinhessen. Some of the vines are up to 45 years old, and all harvesting is done by hand, ensuring strict grape selection and full respect for natural cycles and biodiversity.
Winemaking approach
In the cellar, Moritz Kissinger follows a philosophy that mirrors his vineyard practices. Each plot is vinified separately to highlight the unique expression of every terroir. Fermentation occurs naturally, and between autumn and the following spring, the wines undergo malolactic fermentation. The wines then remain on their lees for at least 10 months, gaining depth, complexity, and balance. Bottling takes place without filtration, preserving the purity of the wine, with only a minimal addition of sulfur dioxide to ensure stability and finesse. The result is an authentic style, sincere and elegant, capable of expressing the true character of Rheinhessen.
Identity and future vision
Beyond the solid family tradition, Moritz brings a personal and forward-looking vision to his wines. In 2022, he planted an additional half-hectare of Chardonnay in Uelversheim, using French clones gifted by friends, a symbol of his collaborative and open-minded spirit. His winemaking project is guided by the pursuit of authenticity and precision, with wines that reflect both the personality of the winemaker and the voice of the land. Each bottle is a dialogue between tradition and modernity, between family roots and international openness, embodying the true essence of Rheinhessen.
