A wine made of balance and place
Un Giorno Capirai 2021 is the result of various small plots around the town of Allerona, in Umbria, where the soils range from sandy to calcareous and clayey. The vines are grown without synthetic treatments, with a fully manual approach and careful vineyard management that respects the plant’s natural rhythms.
The blend is composed of 60% Sangiovese and 40% from a mixed vineyard of Ciliegiolo, Aleatico and Sangiovese. Fermentation is spontaneous in fiberglass tanks, without temperature control. The wine ages for several months in fiberglass, with a short final rest in stainless steel before bottling. No fining, no filtration, minimal added sulfites.
It pours a bright ruby red. On the nose, red fruits, dried herbs and subtle spices emerge. On the palate, it’s fresh and savory, with fine grip and a clean, slightly spicy finish. A red wine that combines simplicity and character in a delicate, drinkable frame.
Serve at 14–16°C, also slightly chilled in warmer seasons. Perfect with light cured meats, roast chicken, grilled vegetables, rustic pies and delicate pastas.
