A wine born from dialogue between grapes and terroir
Simposio 2022 embodies the most creative and experimental vision of ValdiSole. This wine originates from the union of seven different grape varieties, each bringing its own nuance, together creating an unprecedented story of Roero and its hills. It is not a simple blend, but rather a true “symposium” where each variety converses with the others, giving life to a wine that breaks free from regional tradition. A hymn to artisanal freedom, it bridges territorial roots with innovative spirit.
The story of an original blend
The manual harvest, carried out between September 15th and October 8th, involved several local and historical Piedmontese grapes: Brachetto, Freisa, Ruché, Barbera, Pelaverga, Moscato Nero d’Acqui, and Malvasia Nera. Each variety was picked at its peak ripeness, in small 15 kg crates, to preserve integrity and freshness. The choice to craft such a diverse blend was driven by the desire to break established patterns and give voice to grapes rarely seen together in one glass, yet here coexisting in surprising harmony.
Vineyard philosophy and respect for nature
The Simposio 2022 project follows the same philosophy that has guided ValdiSole since its foundation: total respect for nature, no shortcuts, and great attention to soil and vine health. The vineyards are cultivated without synthetic products, with minimal intervention aimed at maintaining balance in the ecosystem. Every bunch is handpicked, selected, and brought to the cellar with care, ensuring that only the purest essence of each grape variety finds expression in the wine.
Artisanal and experimental winemaking
The vinification process of Simposio reflects originality and complexity: Brachetto underwent 15 days of skin contact in stainless steel, while Freisa, Ruché, and Barbera were softly pressed. At the same time, Pelaverga, Moscato Nero d’Acqui, and Malvasia Nera underwent carbonic maceration in steel tanks, adding freshness and unique aromatic traits. After fermentation, Brachetto was blended into the main mass. The wine was aged for 10 months in stainless steel, unfiltered, with only 20 mg/L of sulphur dioxide added at bottling.
Tasting notes and pairings
The bouquet opens with intense floral aromas, followed by fruity cherry notes and elegant spicy hints, particularly pink pepper. On the palate, Simposio 2022 is harmonious, vibrant, and dynamic, with an agile structure reflecting the diversity of its grapes. It is a wine that invites discovery and surprises at every sip. Perfect to pair with creative cuisine, spiced white meats, medium-aged cheeses, and fusion dishes, but also captivating as a modern meditation wine.

History
Founded in 2015 on the Roero hills in Corneliano d’Alba, in the heart of Langhe, Roero and Monferrato, ValdiSole Winery is located in a UNESCO World Heritage Site. The winery began with a small abandoned Nebbiolo vineyard purchased online and has gradually expanded with both young and old vines. All vineyards are situated in the DOCG Roero area, primarily in the Valdistefano denomination, ensuring high-quality grapes and a strong connection to the territory.
Philosophy
ValdiSole follows strict natural practices, without synthetic chemicals or enological forcing. The winery’s philosophy emphasizes authenticity and essentiality, using only the grape as the core ingredient. Wines are produced in a style that blends regional tradition with innovative techniques adapted from other parts of the world, resulting in distinctive aromas, colors, and profiles.
Wine Characteristics
ValdiSole wines are notable for their intensity and complexity, with colors and aromas that can be unconventional. The winery places special focus on orange wines, produced from white grapes fermented with skin contact. This traditional method, lasting from a few days to several months, imparts amber color, structure, aromatic complexity, and enhanced longevity to the wine.
Production and Methods
Grapes used for orange wines and other ValdiSole labels are carefully selected from minimally treated vineyards. Skin contact maceration and aging in selected vessels (stainless steel, cement, or clay amphorae) ensure wines that are intense, long-lasting, and faithful to both nature and terroir.
