The story of a rare grape variety

The Saperavi Budeshuri 2021 comes from carefully selected vineyards in the heart of Signaghi, at about 800 meters above sea level, in the Georgian Kakheti region. This grape variety is a close relative of the more famous Saperavi, but it stands out for its character, elegance, and a finer aromatic texture. Okro works with scattered parcels cultivated on soils of dark clay, sand, and quartz, interpreting an ancient ampelographic heritage with a contemporary approach.

Vineyard philosophy

Okro’s vineyards are managed with a craft and sustainable approach, respecting natural cycles without synthetic chemicals. The altitude and mineral-rich soils allow the production of healthy, concentrated grapes harvested by hand at the perfect balance of sugar, acidity, and phenolic maturity.

Winemaking approach

In the cellar, the grapes are destemmed and spontaneously fermented in traditional Georgian Qvevri (buried clay vessels) with a maceration of about 15 days. After fermentation, the wine ages for 22 months in the same Qvevri without clarification or filtration. No sulfites are added during winemaking except for minimal doses at bottling to ensure stability.

Tasting notes

Color: intense ruby red.
Nose: opens with aromas of sour cherry, rose petals, and a delicate smoky touch.
Palate: rich, juicy, and velvety, with silky tannins, refreshing acidity, and a long finish highlighting the sweetness of ripe fruit.

Okro’s Wines is a landmark Georgian winery for those seeking truly authentic natural wines, produced with traditional methods but a contemporary vision. Founded by John Wurdeman and Gela Patalishvili, it is located in Sighnaghi, in the heart of Kakheti, Georgia’s historical wine region.
Okro’s was born with the mission to revive ancient qvevri winemaking (terracotta amphorae buried underground) and to protect native grape varieties and a unique, uncontaminated terroir.

🌿 Vineyard Philosophy

In the vineyards, Okro’s practices certified organic farming, rejecting synthetic fertilizers and chemical pesticides. The vines grow on hillsides about 700 meters above sea level, in clay and limestone soils that give the wines structure and minerality.
Everything is done by hand — pruning, tending, and harvesting — always respecting the natural balance of the vines. Harvesting is timed with the seasons and never forced.

🍷 Winemaking Approach

The cellar is the beating heart of Okro’s Wines: fermentation happens with native yeasts, without filtration or fining, and with minimal or no added sulfur. Grapes are vinified in traditional qvevri, with long skin contact and natural aging before bottling.
This approach creates authentic, complex wines that can be rustic but are always alive, with deep aromas and remarkable aging potential.
