Vineyard Philosophy
Guigne-Chèvres 2023 comes from one of Domaine Vacheron’s most iconic plots in Sancerre, rooted in chalky marl soils that enhance the wine’s signature minerality. The Vacheron family cultivates their vines biodynamically, respecting biodiversity and natural cycles, with only manual work to guarantee the finest Sauvignon Blanc grapes.
Cellar Approach
In the cellar, the goal is purity and terroir expression: spontaneous fermentation with indigenous yeasts, no chemical additives, ageing in stainless steel and large oak barrels to preserve the wine’s vibrant minerality. Guigne-Chèvres stands out for its refined character and precise aromatic profile.
Tasting Notes
Colour: bright straw yellow. Nose: intense and elegant, with notes of white flowers, lemon zest, flinty minerality and fresh herbs. Palate: dry and vibrant, with crisp acidity, lean body and a long, salty, mineral finish.

Domaine Vacheron
History
Domaine Vacheron is one of the historic and most respected producers in Sancerre, located in the heart of the Loire Valley. The Vacheron family has farmed vines for generations, but under the leadership of Jean-Laurent and Jean-Dominique Vacheron, the estate fully embraced biodynamic viticulture, becoming a pioneer of natural farming in the region.
Vineyard Philosophy
The domaine’s vineyards lie on the best terroirs of Sancerre: flint (silex), limestone, and clay soils that give the wines their signature purity and minerality. All vines are hand-tended and farmed organically and biodynamically under Demeter certification, with great care for biodiversity and the lunar calendar.
Winemaking Approach
In the cellar, Vacheron uses a low-intervention approach: native yeast fermentations, parcel-by-parcel vinifications, ageing in stainless steel, large barrels or amphorae depending on the cru. The result: precise, mineral, age-worthy Sancerre whites (Sauvignon Blanc) and delicate, expressive reds (Pinot Noir).
