Le Petit Beaufort Extra Brut 2016 is a traditional method sparkling wine crafted with precision and purity by Quentin Beaufort in the heart of Côte-d’Or. Born from vineyards perched at over 400 meters above sea level, this wine reflects a unique terroir rarely associated with sparkling production. The 2016 vintage expresses tension, minerality and sharpness, enhanced by a long bottle aging and no dosage. It’s a pure, honest expression of nature and time.
Philosophy in the vineyard and cellar approach
Biodynamic viticulture and limestone-rich soils are the foundation of this cuvée. The cool climate allows slow ripening, preserving natural acidity. Fermentations are spontaneous with indigenous yeasts, and the second fermentation occurs in bottle, followed by over 30 months on the lees. No fining, no filtration, minimal intervention. The Extra Brut dosage lets the terroir shine through with clarity.

Quentin Beaufort is an increasingly prominent name in the world of natural wine, thanks to a production philosophy that blends precision, sensitivity, and deep environmental respect. Raised in the historic Jacques Beaufort estate, a pioneer of organic viticulture in Champagne since the 1970s, Quentin has forged his own artisanal path between southern Champagne and Burgundy.
Philosophy in the vineyard
In the heart of the Côte d’Or, in Prusly-sur-Ource, Quentin cultivates around 8.5 hectares of Pinot Noir and Chardonnay on calcareous and clay soils. The vineyards are farmed organically and biodynamically, with no synthetic chemicals. All work is done by hand, from pruning to harvest, with a strong focus on soil health and plant vitality.
Winemaking approach
In the cellar, Quentin Beaufort follows a truly natural style. Fermentations are spontaneous with native yeasts, and no filtering, fining, or temperature control is used. Sulfites are added minimally, only for barrel sanitation. Long lees aging and time are key to expressing the complexity of his sparkling wines, whether labeled as Champagne or Crémant de Bourgogne, often without dosage.
Territorial identity
Although Burgundy does not allow wines to be labeled as Champagne, Beaufort’s Crémant de Bourgogne offers expressive freedom. These wines share Champagne’s energy: fine bubbles, vibrant acidity, mineral depth, and clean precision. Single-vineyard and single-vintage bottlings showcase the full character of Pinot Noir grown on limestone.
Signature wines
Beaufort’s wines, such as his Champagne Blanc de Noirs and Crémant aged over 36 months, are now highly sought after. Aromas range from red berries and brioche to flint and candied citrus.
