Philosophy in the vineyard
The Les Poruzots climat, just below the iconic Genevrières, is known for producing fuller, more powerful wines. Mikulski’s vines, farmed organically (though uncertified), benefit from an ideal exposure and deep clay-limestone soils that allow for balanced ripeness and vibrant minerality. In 2021, François and his son Jules worked with great precision to protect the vines’ natural equilibrium, avoiding hydric stress and hand-selecting the healthiest clusters at harvest.
Approach in the cellar
In the cellar, the vinification of Poruzots reflects Mikulski’s signature style: restraint, clarity, and transparency. Spontaneous fermentation occurs in oak barrels, with minimal bâtonnage and a subtle touch of new wood (no more than 20%). The wine ages for 12 months in barrel followed by 6 months in stainless steel to settle. The result is a white Burgundy that combines the generous character of the climat with sharp tension, mineral depth, and crystalline precision.

The nose opens with citrus peel, fresh butter, flint and a delicate smokiness from the oak.
On the palate, it is layered and full, with saline drive, textured breadth, and a long finish marked by white flowers, hazelnut, and chalky energy.
