Vineyard Philosophy
Le Colline Celeste 2020 is born on the hills of Eguisheim, where the Hausherr family works its 3.75 hectares with strict organic and biodynamic methods. All vineyard work is done by hand or with a draft horse, maintaining soil vitality and natural biodiversity. The healthy grapes reflect the perfect balance between vine and land.
Cellar Approach
This sparkling wine blends Gewurztraminer (70%), Riesling, and Pinot Gris. After spontaneous fermentation, the wine is bottled alive to complete its second fermentation naturally, with no added sulphites or filtration. Ageing in large wooden casks adds depth and elegance. A genuine Pet-Nat, vibrant and true to its Alsatian terroir.

Cellar Approach
In the cellar, the care and respect for the fruit continue just as meticulously. Grapes are hand-harvested and pressed with a manual vertical press, a technique that preserves the integrity of the fruit. Thanks to the natural balance achieved in the vineyard, the musts require no chemical intervention or additives during vinification. Hausherr also stands out for the practice of complantation, an ancient Alsatian tradition of co-fermenting different grape varieties from the same lieu-dit to authentically express the terroir, going beyond simple varietal character. Their wines bear the name of the place of origin or the cuvée, ensuring a strong and recognizable territorial identity.
