History of the wine
The name “Cuvée du Saule” honors the willow tree, a symbol of grace and resilience, just like this rare Grand Cru. Covering only 2.7 hectares, Griotte-Chambertin is one of Burgundy’s smallest climats, yet it is celebrated for producing Pinot Noir of sensual complexity. In 2021, meticulous harvesting and strict grape selection ensured a wine of authenticity and terroir purity, despite the difficulties of the season.
Vineyard philosophy & cellar approach
The vineyards are farmed without systemic chemicals, with great care for biodiversity and soil vitality. Manual harvesting ensures only the finest clusters are selected. In the cellar, Laurent and Clément Ponsot apply their philosophy of “haute couture” winemaking, with spontaneous fermentations, carefully judged French oak aging, and the innovative ArdeaSeal closure, which guarantees longevity and aromatic preservation.

Based in Gilly-Lès-Cîteaux, in the heart of Burgundy, the estate stands at the crossroads of tradition and innovation. The project is both a Domaine, with 7 hectares of vineyards in prestigious areas, and a Maison de Négoce, selecting top-quality grapes to craft refined cuvées. With more than 26 Burgundy appellations produced, this new chapter quickly became a global benchmark, thanks to Laurent’s modern vision and meticulous attention to detail.
