Gaitu is one of Valli Unite’s most emblematic labels, born from the cooperative’s wish to craft a true and unadulterated Barbera, reflecting the essence of the Colli Tortonesi. The name, taken from local dialect, suggests freedom and spontaneity, much like the natural fermentation that defines it. The 2021 vintage brought ideal ripeness and balance, producing a wine that’s juicy, expressive and full of life — a perfect representation of the cooperative’s values.
Philosophy in the Vineyard
The grapes come from certified organic vineyards growing on clay-limestone soils at around 300 meters altitude. The vines are nourished with organic compost from the cooperative’s own farm and green manure of legumes, with no herbicides or synthetic fertilizers. Each plot is treated as a living organism, fostering biodiversity and soil health. The result: healthy, vibrant grapes that transmit the soul of their land.
Winemaking Approach
The Gaitu Barbera 2021 ferments spontaneously with native yeasts in stainless steel tanks. After malolactic fermentation, it matures for several months in cement vats, achieving balance and depth. No fining, no filtration, and only minimal sulphur addition (below 40 mg/l). This low-intervention approach yields a pure, energetic and expressive Barbera that retains its natural integrity and freshness.

History and Origins of Valli Unite
Founded in 1981 in Costa Vescovato, a small village in the province of Alessandria, Valli Unite was born from the vision of three young farmers who decided to join forces and create an independent and cooperative farming community. Over time, that small group has grown into nearly forty members, all sharing a common ideal that goes beyond winemaking — a true cultural and human alliance. Surrounded by the rolling hills of the Tortona area, the cooperative has built its identity on agricultural independence, respect for nature, and collective work, establishing itself as a reference point for sustainable viticulture in Piedmont.
Philosophy in the Vineyard
On its 100 hectares of land, of which 22 are dedicated to vines, Valli Unite cultivates Barbera, Timorasso, Croatina and other local varieties following a strictly organic approach. The estate includes a farm with livestock, which provides natural fertilizer for the fields, ensuring the fertility and vitality of the soil. Green manures composed of leguminous herbs enrich the land and promote biodiversity. Each vineyard is tended by hand, with minimal intervention, allowing the vines to express their true character and the landscape to retain its natural balance.
Winemaking Approach
The cellar of Valli Unite is a place where wine is guided, not manipulated. Fermentations occur without selected yeasts, letting indigenous microorganisms reveal the identity of the grapes and the land. Sulphur dioxide is added only in very low quantities (less than 40 mg/l) to preserve the wine’s vitality and purity. The goal is to produce a living, evolving wine, one that changes over time and reflects the rhythm of nature. Every technical choice is guided by patience, intuition, and deep respect for the raw material.
