The Chateau Deville Côtes de Bordeaux 2020 comes from the heart of Rions, Bordeaux, where Jean Paul Deville continues to express his respectful and conscious viticulture approach. In the 36 hectares of vineyards, biodiversity and soil vitality are central to every agricultural practice. The dominant Merlot meets Cabernet Sauvignon and Cabernet Franc in perfect balance, resulting from controlled yields and manual harvests. The goal is to bring healthy, ripe, and authentic grapes to the cellar, able to tell the true soul of Côtes de Bordeaux, combining elegance and structure.
Approach in the cellar
In the cellar, Jean Paul Deville aims to enhance the varietal and territorial character of this red wine. After a 3–4 week maceration on the skins, the wine is drained and then aged partly in stainless steel and partly in oak barrels, preserving the fruit’s freshness while adding complexity. This choice balances modernity and tradition, producing a red wine with a soft yet lively soul, gentle tannins, and smooth drinkability. The result is a contemporary “claret,” perfect for everyday dining.
Tasting notes
The color is intense ruby red with violet reflections.
The nose opens with dark petal flowers, forest fruits, sour cherry, plum, and damson, with mineral and delicate spicy hints.
