Philosophy in the Vineyard
The Dolcetto grapes come from certified organic vineyards planted on clay-limestone soils between 250 and 300 meters above sea level. The vines are cultivated with green manure, organic compost, and zero chemical inputs, following a philosophy of biodiversity and self-sufficiency. This sustainable approach results in grapes full of life, capable of expressing the true essence of the Colli Tortonesi terroir.
Winemaking Approach
Fermentation is spontaneous with native yeasts in stainless steel, followed by several months of aging in cement vats. There is no fining, no filtration, and only minimal sulphur (under 40 mg/l) added before bottling. The outcome is a pure, vibrant Dolcetto, marked by clarity, freshness, and drinkability — a wine that perfectly captures the honest spirit of natural Piedmont reds.

History and Origins of Valli Unite
Founded in 1981 in Costa Vescovato, a small village in the province of Alessandria, Valli Unite was born from the vision of three young farmers who decided to join forces and create an independent and cooperative farming community. Over time, that small group has grown into nearly forty members, all sharing a common ideal that goes beyond winemaking — a true cultural and human alliance. Surrounded by the rolling hills of the Tortona area, the cooperative has built its identity on agricultural independence, respect for nature, and collective work, establishing itself as a reference point for sustainable viticulture in Piedmont.
Philosophy in the Vineyard
On its 100 hectares of land, of which 22 are dedicated to vines, Valli Unite cultivates Barbera, Timorasso, Croatina and other local varieties following a strictly organic approach. The estate includes a farm with livestock, which provides natural fertilizer for the fields, ensuring the fertility and vitality of the soil. Green manures composed of leguminous herbs enrich the land and promote biodiversity. Each vineyard is tended by hand, with minimal intervention, allowing the vines to express their true character and the landscape to retain its natural balance.
Winemaking Approach
The cellar of Valli Unite is a place where wine is guided, not manipulated. Fermentations occur without selected yeasts, letting indigenous microorganisms reveal the identity of the grapes and the land. Sulphur dioxide is added only in very low quantities (less than 40 mg/l) to preserve the wine’s vitality and purity. The goal is to produce a living, evolving wine, one that changes over time and reflects the rhythm of nature. Every technical choice is guided by patience, intuition, and deep respect for the raw material.
