In the vineyard: a unique terroir and natural farming
The grapes for Dinavolo Rosso come from high-altitude vineyards in the Colli Piacentini, where calcareous and clay soils contribute to producing high-quality fruit. The cultivation is fully natural, with no use of pesticides or chemical fertilizers. Each bunch is hand-harvested to ensure only the finest grapes are selected. The altitude and cool climate allow for slow ripening, preserving acidity and enhancing aromatic complexity.
In the cellar: traditional vinification and wood aging
Dinavolo Rosso is made following a process that honors tradition while embracing innovation. Fermentation is spontaneous, using only native yeasts, with no selected yeast added. The wine undergoes extended skin contact maceration, extracting depth and a solid structure. Aging takes place in wooden barrels, which add further complexity and finesse. In line with the winery’s philosophy, there are no additives, and the wine is not filtered.
Tasting profile: rich, structured, with spicy notes
In the glass, Dinavolo Rosso reveals a deep ruby red color with violet hues. On the nose, it opens with ripe red fruit, like cherry and plum, layered with spices, black pepper, tobacco, and a hint of licorice. On the palate, it’s rich and structured, with a vibrant acidity that balances the full body. The finish is long and enveloping, with persistent fruit and spicy nuances.

Denavolo is the winery founded in 2005 by Giulio Armani, a charismatic figure in Italian natural wine and longtime winemaker at the nearby La Stoppa estate. Located in Travo, on the Colli Piacentini between the Trebbia and Nure valleys in Emilia-Romagna, the winery embodies a radical and consistent vision of artisanal white wine — an honest expression of altitude, soil, and time.
The vineyards, planted between 350 and 700 meters above sea level on calcareous-clay soils, are farmed naturally, without chemicals or synthetic treatments. Biodiversity is preserved, and every action in the vineyard is guided by deep respect for the environment. In the cellar, Giulio Armani works with spontaneous fermentations, extended skin contact, and avoids any clarification or filtration. His wines, mostly whites from native varieties such as Malvasia di Candia Aromatica, Ortrugo, Marsanne, and Trebbiano, are deep, textural, slightly oxidative, and capable of fascinating evolution.
