Philosophy and Origin
Cuvée Evdemon 2017 represents the boldest expression of Estate Argyros’ vision for Santorini. Sourced from biodynamically farmed Assyrtiko vineyards in Pyrgos, among the oldest on the island (150–200 years old, ungrafted) with extremely low yields, this wine pushes the boundaries of purity and depth. Partially uninoculated fermentation and an extended aging period create a layered, structured wine that rewards patience and evolves beautifully over time.
Vinification
Fermented in stainless steel vats at controlled temperatures (16–17°C) for about three weeks, partially with wild yeasts. Around 25% of the blend matures for twelve months in French oak barriques, then reunites with the stainless steel–aged portion for a total of thirty months on fine lees with regular bâtonnage.
Tasting Notes
Deep straw yellow colour. Complex nose with ripe citrus, dried nuts, subtle smoky notes and a pronounced mineral backbone. On the palate, it is structured and textural, with vibrant acidity, depth and a long, evolving finish. Age-worthy for over 15 years.

Argyros Winery
The volcanic heritage of Santorini
Founded in 1903, Argyros Winery is one of the oldest and most prestigious producers on Santorini, the symbolic island of volcanic wine in the heart of the Aegean. Located in Episkopi Gonia, the estate is still run by the Argyros family, now in its fourth generation. Here, viticulture is a living heritage that combines tradition and innovation to enhance a unique terroir.
Vineyard philosophy
Argyros’ vineyards cover about 120 hectares, with vines of Assyrtiko, Aidani, and Mavrotragano, many of which are pre-phylloxera and over a century old. Grown on sandy volcanic soils, poor in organic matter but rich in minerals, these vineyards benefit from a dry and windy climate that protects the grapes from diseases and molds. Sustainable management with deliberately low yields ensures healthy, concentrated clusters that fully express Santorini’s identity.
Winemaking approach
At the winery, Argyros works with a light hand to highlight the purity of the fruit and the extraordinary minerality of the terroir. Hand harvesting, low-temperature fermentations with native yeasts, and carefully calibrated aging in steel or wood produce white wines that are tense, long-lived, and profound. Each label is a declaration of love for the island: a union of history, volcanic soil, and the unmistakable energy of the Aegean Sea.
