A Cabernet Franc that reflects the depth of the terroir
Grown in the heart of the Loire Valley, Les Perruches is a site defined by gravel and silt soils, ideal for producing structured and mineral-driven wines. Béatrice and Pascal Lambert have been working their vineyards under organic and biodynamic principles, respecting natural cycles and soil vitality. Here, Cabernet Franc reveals its most sincere and powerful expression, while preserving vibrancy and precision.
Biodynamic farming and low-intervention winemaking
Harvested manually in small crates, the grapes are carefully destemmed before undergoing a long maceration of 25–30 days in cement vats, with gentle manual punch-downs. Fermentation takes place with native yeasts, allowing a true expression of vintage and varietal. The wine matures for 12 months in large wooden truncated vats, followed by an additional 6–8 months in concrete tanks, ensuring roundness and balance without losing freshness.
Deep and mineral with a vibrant energy
Deep ruby in color, the nose reveals ripe red berries, floral hints, and subtle earthy tones. The palate is fresh, linear, and mouth-filling, finishing with firm tannins and a clear mineral edge, reflecting its stony terroir and natural vinification.

Major operations—from pruning to treatments—are guided by the lunar calendar, in tune with cosmic and earthly cycles. This intimate connection ensures that vines produce healthy grapes brimming with aromatic potential, while biodiversity is enhanced through the encouragement of beneficial insects and soil microorganisms, ensuring a robust and resilient vineyard ecosystem.
In the cellar: minimal intervention and lunar timing
Winemaking at Lambert follows the same philosophy as the vineyard: minimal intervention, patience and fidelity to natural rhythms. Vinifications often rely on spontaneous fermentation, and cellars operate according to the lunar cycle, just like the vines outside. Each cuvée is shaped gently and allowed to evolve without force. Lambert wines are certified Ecocert and Biodyvin, testifying to their transparent commitment to sustainable, living agriculture.
