Vineyards and Terroir
The Chardonnay vines grow on poor but expressive blue marl and limestone soils. Roots dig deep, giving the wine a remarkable mineral and saline tension. The 2018 vintage produced healthy, concentrated grapes with low yields to preserve the fruit’s finesse. Manual harvesting in small crates ensures perfect integrity of the berries, achieving a natural balance between acidity and structure.
Vinification and Aging
Fermentation occurs spontaneously in used barrels with indigenous yeasts, followed by approximately 18 months of aging. The barrels are ouillé, regularly topped up to prevent oxidation. Minimal sulfites are used only at bottling, and no filtration or fining is applied. This approach produces a lively, complex wine with purity and mineral precision, while lees aging adds roundness and texture.

Aroma: white fruit, green apple, candied lemon, white flowers, toasted hazelnut, flint, and a hint of salted butter; with aeration, notes of honey and almond emerge.
Palate: tense and mineral on entry, then creamy and enveloping; vibrant acidity supports a full yet refined body, with a long, dry, saline finish.
