Les Noues 2019 is a cuvée that perfectly expresses the character of Pinot Noir from Écueil, a small gem in the heart of the Montagne de Reims. Like the 2020 vintage, but with additional maturity that enhances its complexity, this Champagne showcases the finesse and intensity of the terroir, while maintaining the freshness and tension that define Savart’s style.
The wine comes from the Les Noues parcel, but the variability of the 2019 harvest brings greater roundness and richness, creating a cuvée that captivates with its balance between fruit, minerality, and wood.
In the vineyard
Frédéric continues to work his vineyard with a sustainable viticulture approach, free from herbicides or synthetic pesticides. The vines are carefully nurtured, and the work in the vineyard is always aimed at respecting the natural biodiversity of the soil. The harvest is done manually, with a strict selection to ensure that only the best grapes make it to the winery.
In the winery
The vinification takes place entirely in used wood (barriques and demi-muids), just like in 2020, but the structure and complexity of the 2019 vintage express themselves in a more enveloping way. Fermentation occurs with native yeasts, and malolactic fermentation is blocked to preserve the freshness and natural tension of the wine. After approximately 10 months of aging on the lees, the wine is bottled and continues to age sur lattes. The dosage is kept to a minimum, allowing the wine to express itself in its purest form.
