A solar, vibrant Pinot Noir from the heart of Écueil
Les Noues 2018 captures the expressive richness of Pinot Noir from the Premier Cru village of Écueil, in a vintage that offered both ripeness and structure. The warm and dry growing season led to fully mature grapes, resulting in a Champagne that is generous and textured, yet still infused with the trademark tension and chalky precision that define Frédéric Savart’s style.

In the vineyard
Savart works the vineyard with a sustainable and minimalist approach, avoiding all herbicides and synthetic chemicals. The vines are tended entirely by hand, following a philosophy that respects soil health and biodiversity. The 2018 vintage was harvested at full ripeness, but only after a rigorous selection of perfectly healthy grapes.
In the cellar
Fermentation takes place entirely in used oak barrels and demi-muids, allowing texture to build without overpowering the wine. Indigenous yeasts are used exclusively, and malolactic fermentation is blocked to retain the wine’s fresh acidity. After aging for about 10 months on fine lees in barrel, the wine is bottled and undergoes secondary fermentation and aging sur lattes. The dosage is kept very low, just enough to round out the structure without masking purity.
