In the vineyard
The Mont Benoit parcel is farmed using natural and sustainable practices. No herbicides or synthetic pesticides are used. All vineyard work is done by hand with a focus on maintaining healthy vines and expressing the unique character of the terroir. The goal is to capture the truth of the place in each bottle.
In the cellar
Fermentation is carried out with native yeasts in used barriques and demi-muids. Malolactic fermentation is blocked to preserve freshness and tension. The base wines age for around 10 months in oak before bottling for secondary fermentation. The wine rests sur lattes before being disgorged with a minimal dosage, keeping the profile dry and crystalline.
