In the vineyard
The Mont Benoit parcel is farmed with natural, sustainable methods, free from synthetic chemicals. Vineyard work is entirely manual, aimed at enhancing biodiversity and expressing the true voice of the terroir. The sandy-chalk soils yield grapes with tension and aromatic lift.
In the cellar
Fermentation is carried out with indigenous yeasts in used oak barrels and demi-muids. Malolactic fermentation is prevented, preserving the wine’s fresh, vertical profile. After 10 months of aging in wood, the wine undergoes secondary fermentation in bottle, followed by extended lees aging. It’s disgorged with a minimal dosage, maintaining its Extra Brut character.
