Vineyard Philosophy
The grapes come from a single vineyard in Prusly-sur-Ource, managed with certified organic and biodynamic methods. No synthetic chemicals are used—only copper, sulfur, herbal teas, and a close relationship with lunar cycles. Manual harvesting ensures careful grape selection and optimal ripeness for freshness and balance.
Cellar Approach
Vinification is minimalist and transparent. The must ferments spontaneously with native yeasts in neutral vessels. No temperature control, no filtration, no additives. The second fermentation happens in bottle according to the ancestral method, with no dosage and long lees aging of over 36 months. Time does the rest.

In the heart of the Côte d’Or, in Prusly-sur-Ource, Quentin cultivates around 8.5 hectares of Pinot Noir and Chardonnay on calcareous and clay soils. The vineyards are farmed organically and biodynamically, with no synthetic chemicals. All work is done by hand, from pruning to harvest, with a strong focus on soil health and plant vitality.
Winemaking approach
In the cellar, Quentin Beaufort follows a truly natural style. Fermentations are spontaneous with native yeasts, and no filtering, fining, or temperature control is used. Sulfites are added minimally, only for barrel sanitation. Long lees aging and time are key to expressing the complexity of his sparkling wines, whether labeled as Champagne or Crémant de Bourgogne, often without dosage.
Territorial identity
Although Burgundy does not allow wines to be labeled as Champagne, Beaufort’s Crémant de Bourgogne offers expressive freedom.
