After leaving his family Domaine, Laurent Ponsot sought to reinterpret these iconic grapes with a contemporary approach, combining high craftsmanship and technology. Since 2017, the cuvée has been personally overseen by Laurent and Clément, ensuring meticulous care from vineyard to bottle. The project highlights the unique qualities of Clos de Bèze, producing an elegant, powerful wine capable of evolving for decades.
Vineyard Philosophy and Winemaking Approach
The grapes come from Clos de Bèze, a Grand Cru vineyard planted exclusively with Pinot Noir, cultivated without systemic chemicals. Hand harvesting and strict selection in both vineyard and cellar guarantee the highest quality. In the cellar, vinification follows the haute couture enology principle: spontaneous fermentation with indigenous yeasts, precise temperature control, and aging in French oak barrels. Laurent Ponsot uses the ArdeaSeal closure to protect the wine from oxidation and ensure optimal aging, replacing sulfur dioxide with neutral gas when necessary. This method preserves purity, complexity, and aromatic integrity.

With more than 26 Burgundy appellations produced, this new chapter quickly became a global benchmark, thanks to Laurent’s modern vision and meticulous attention to detail.
