A timeless Pinot Noir from the heights of Beaune
The Bourgogne Hautes Côtes de Beaune Rouge Vieilles Vignes comes from vines averaging 50 years old, rooted at 450 m altitude on marl and clay soils with west-facing slopes. Vinified like the great Burgundies, this wine reveals all the depth of old vines and the finesse of a precise traditional method. The aim is always to obtain balanced grapes, harvested by hand and fully destemmed to respect the fruit and terroir. The result is a wine capable of ageing 5 to 10 years, depending on the vintage.
In the cellar
Vinification follows classic Burgundian tradition: a cold pre-fermentation maceration enhances aroma extraction, then alcoholic fermentation lasts 15 to 18 days with délestage for gentle extraction. Ageing takes place for 18 months in tank, then the wine is bottled without filtration or fining, to keep all its natural richness.

Nose: Fresh and fruity, with cherry and raspberry that evolve into blackcurrant, liquorice and a delicate spicy touch.
Palate: Harmonious and charming, supple yet structured, with fine tannins and an elegant finish on red fruits.

Vineyard philosophy
The estate’s philosophy is firmly focused on quality. Short pruning, shoot thinning and green harvesting help control yields, ensuring healthy, concentrated grapes. The vineyards are worked with regular ploughing and grass cover to manage vine vigour naturally. Treatments are carefully managed and kept to a minimum to protect the environment. This commitment demands daily attention, strict discipline and a deep connection with nature, so that every wine faithfully expresses the terroir.
Winemaking approach
In the cellar, intervention is kept to a minimum to preserve the fruit’s purity and each appellation’s authentic character. Vinification respects the rhythms of nature and brings out the best in every plot. Thanks to this artisanal approach, Domaine Claude Nouveau wines are renowned for their elegance, typicity and graceful ageing potential. Since 2021, the estate’s dedication to sustainability has been recognised by the Haute Valeur Environnementale (HVE) level 3 certification, France’s highest environmental standard.
