The Vineyard
The Bourgogne Hautes Côtes de Beaune Blanc 2023 comes from vineyards located at 400 meters above sea level, on marl and clay soils facing west. These conditions allow a slow, balanced ripening of the Chardonnay grapes. The vines, aged 31 to 35 years, are harvested by hand to ensure the best bunches are selected.
In the Winery
After picking, the grapes undergo alcoholic fermentation for 12 to 15 days in stainless steel tanks. Ageing continues in steel for 10 months, preserving the wine’s fresh, vibrant character and highlighting its pure varietal expression without oak influence.
Tasting Notes
In the glass, it shows a beautiful pale golden hue. The nose is refined, with elegant aromas of white flowers, hawthorn, lemongrass and a subtle flinty touch. On the palate, it’s fresh, mineral and delicately citrusy. Perfect when served at 10 to 13°C, it pairs well with shellfish, escargot, delicate charcuterie or a fine fish terrine.

Vineyard philosophy
The estate’s philosophy is firmly focused on quality. Short pruning, shoot thinning and green harvesting help control yields, ensuring healthy, concentrated grapes. The vineyards are worked with regular ploughing and grass cover to manage vine vigour naturally. Treatments are carefully managed and kept to a minimum to protect the environment. This commitment demands daily attention, strict discipline and a deep connection with nature, so that every wine faithfully expresses the terroir.
Winemaking approach
In the cellar, intervention is kept to a minimum to preserve the fruit’s purity and each appellation’s authentic character. Vinification respects the rhythms of nature and brings out the best in every plot. Thanks to this artisanal approach, Domaine Claude Nouveau wines are renowned for their elegance, typicity and graceful ageing potential. Since 2021, the estate’s dedication to sustainability has been recognised by the Haute Valeur Environnementale (HVE) level 3 certification, France’s highest environmental standard.
