The Vineyard
Bourgogne Aligoté 2023 comes from vines rooted in marl and clay soils, with an average age between 30 and 75 years, giving the wine remarkable depth and complexity. The vineyard covers about 0.72 hectares and is cultivated with great care. The grapes are hand-harvested to ensure perfect ripeness and maximum quality.
Winery Approach
Vinification involves a gentle alcoholic fermentation lasting 12 to 15 days, followed by aging exclusively in stainless steel tanks for 10 months, preserving all the wine’s freshness and delicate aromas. The absence of wood keeps the pure, fruity and floral profile of the Aligoté intact.
Tasting Notes
Bright pale straw yellow in colour, Bourgogne Aligoté shows a fresh, fruity nose with floral hints of acacia and hawthorn. On the palate, it is lively and crisp, with pleasant citrus notes that make it perfect as an aperitif, especially in the classic Kir. Excellent with grilled fish, oysters, tabbouleh, steamed vegetables, Burgundian gougères, jambon persillé and snails. Serve at 9-12°C.

Vineyard philosophy
The estate’s philosophy is firmly focused on quality. Short pruning, shoot thinning and green harvesting help control yields, ensuring healthy, concentrated grapes. The vineyards are worked with regular ploughing and grass cover to manage vine vigour naturally. Treatments are carefully managed and kept to a minimum to protect the environment. This commitment demands daily attention, strict discipline and a deep connection with nature, so that every wine faithfully expresses the terroir.
Winemaking approach
In the cellar, intervention is kept to a minimum to preserve the fruit’s purity and each appellation’s authentic character. Vinification respects the rhythms of nature and brings out the best in every plot. Thanks to this artisanal approach, Domaine Claude Nouveau wines are renowned for their elegance, typicity and graceful ageing potential. Since 2021, the estate’s dedication to sustainability has been recognised by the Haute Valeur Environnementale (HVE) level 3 certification, France’s highest environmental standard.
