Overview
Vincè 2023 comes from over 60-year-old historic vineyards planted at 560 meters above sea level on volcanic soils rich in white rock and clay. This white wine blends Malvasia, Procanico, and Roscetto into a bright, terroir-driven expression. Guyot training and moderate yields of 70 quintals per hectare provide concentration, identity, and precision. Slow, controlled fermentation in steel and extended aging result in an elegant, fresh, and harmonious white wine.
History of the wine
Vincè reflects Monti della Moma’s commitment to honoring old vines and expressing the local terroir. Each vintage mirrors the soil and climatic conditions, combining tradition with modern freshness. Vincè represents a personal interpretation of the Est! Est!! Est!!! denomination, more refined than the 2024 version while staying true to its territorial identity.
Vineyard philosophy
The historic vineyards are carefully managed manually, respecting natural cycles and emphasizing vegetative balance. Guyot training ensures optimal grape ripening and healthy, aromatic berries. Significant thermal excursions and volcanic soils enhance minerality and freshness, giving the wine a distinct and unique character.
Cellar approach
After hand harvesting, grapes undergo a gentle pressing and only the free-run juice (65% yield) is used. Fermentation is slow and controlled in steel over approximately one month. Aging continues for six months in steel, followed by six months in the bottle before release. No fining or filtration is performed, preserving freshness, elegance, and aromatic typicity.
Tasting notes and pairings
Vincè 2023 shows a bright straw-yellow color. Aromas of hawthorn, jasmine, and pear emerge. On the palate it is balanced, fresh, and smooth, with harmonic persistence inviting another sip. Excellent with seafood appetizers, delicate pasta dishes, baked fish, or fresh cheeses.

Overview
In the heart of Montefiascone, among hills steeped in history and ancient vineyards, Monti della Moma was born, a winery passionately led by twin sisters Elisa and Valentina Monti, born in 1988. With a contemporary vision but deep roots in family memory, the Monti sisters carry a project that speaks of identity, territory, and authenticity. Alongside them, winemaker Luca Faccenda enhances the voice of the vineyards overlooking Lake Bolsena, faithfully expressing the unique character of the soils and microclimates.
History and tradition
The connection to the land runs deep: the grandfather and uncle laid the foundation for what is today Monti della Moma. Montefiascone is famous for the legend of Est! Est!! Est!!!, a wine that fascinated a German bishop in the 12th century. According to the story, the bishop’s servant would write “Est” on tavern doors with good wine; upon reaching Montefiascone, he was so impressed by the local wine that he wrote “Est! Est!! Est!!!” with growing enthusiasm. Today, the wines preserve this historical and cultural memory.
Vineyard philosophy
The winery’s four hectares of vineyards are carefully and attentively managed, respecting the natural expression of the land. All vineyards face Est! Est!! Est!!! and are cultivated with environmentally respectful practices, prioritizing manual work and sustainability. Each row is treated as a living organism, aiming to convey in the bottle the uniqueness of the terroir and the minerality of the volcanic and calcareous soils of the area.
Cellar approach
In the cellar, the focus remains on natural processes: grapes are vinified with spontaneous fermentations, without selected yeasts, fining, or filtration, and with minimal use of sulfites. This approach produces authentic, vibrant wines capable of conveying the character of each vintage. Every bottle of Monti della Moma is a journey through history, territory, and passion, a modern expression of millennial tradition.
