The label depicts two children sitting under the summer sky, facing the moon and the rolling Berici Hills, homeland of Ca’ Oche. It captures the carefree spirit that defines this wine: pure, luminous, and honest, meant to be shared without worries.
Wine Story
The Senza Pensieri project was born from the desire to express the most spontaneous and genuine soul of the winery. A white wine that reflects the harmony between Sauvignon Blanc and Tai Bianco, blending aromatic brightness with structure and depth. It’s a wine that evokes summer evenings, laughter, and the easy joy of simplicity — a sincere reflection of Venetian character.
Vineyard and Production Philosophy
The grapes are grown in Villaga, in the heart of the Colli Berici, at 120 meters above sea level with southern exposure. The clay-limestone soils enrich the wine with minerality and tension. The 20–30-year-old vines, trained with Guyot and Simonit-pruned spur systems, are planted at 5,000 vines per hectare with yields limited to 25 ql/ha.
The approach in the vineyard follows sustainable methods: green manure between rows, sexual confusion pest control, copper and sulfur treatments, and precise green pruning. Every detail is designed to respect the natural rhythm of the vine and preserve biodiversity.
Winemaking and Aging
Harvested by hand in small 10 kg boxes during the second decade of September, the grapes are destemmed and left to ferment with their skins for three days in open vats, with daily manual punch-downs. After gentle pressing, fermentation finishes in stainless steel tanks.
Fermentation is spontaneous, using indigenous yeasts at 20–22°C, followed by 4–5 months of aging in steel, where the wine completes malolactic fermentation, achieving perfect balance between freshness and roundness.
Tasting Notes and Pairings
Color: deep straw yellow with golden reflections.
Nose: fragrant and expressive, with notes of white flowers, ripe citrus, aromatic herbs, and a touch of minerality.
Palate: dry, crisp, and vibrant, with fresh acidity and a clean, citrus-driven finish.
A wine of great drinkability, perfect with seafood, grilled fish, fresh cheeses, and vegetarian dishes. Serve at 10–12°C.

Origins and Foundation
The story of Ca’ Oche begins in 2023, when after years of experience and experimentation, a young winemaker decided to establish his own tiny independent cellar in the heart of the Colli Berici. The name “Ca’ Oche” comes from an old country road that once crossed the area — a symbol of roots and belonging. The estate covers just one hectare of vineyard in Villaga, one of the most suitable and sunlit slopes of the Berici Hills, where everything revolves around passion, precision, and place.
Philosophy in the Vineyard
Ca’ Oche focuses entirely on Tai Rosso, the indigenous red grape of the Berici Hills. The vineyards are cultivated by hand, following organic and sustainable principles, with great care for soil health and ecosystem balance. Every action in the vineyard is guided by observation and respect — minimal intervention, maximum authenticity. The aim is to grow vibrant, living grapes capable of capturing the terroir’s true character and translating it into elegant, sincere wines.
Approach in the Cellar
In the cellar, patience and simplicity define the winemaking process. Fermentations are spontaneous with native yeasts, and maturation happens naturally in stainless steel, cement, or neutral wood depending on the vintage. No fining, no filtration — only time and gravity. The result is a range of pure, evolving wines, each expressing the soul of Tai Rosso and the personality of the Berici Hills.
Identity and Vision
Ca’ Oche is born from the desire to redefine Tai Rosso through a dialogue between tradition and innovation. Every bottle reflects a small piece of landscape, transformed by intuition and care. Production is extremely limited, crafted by hand and guided by authenticity. The mission is not volume but harmony between man, vine, and land — a timeless conversation told through wine.
