The Bressan Schioppettino 2020 embodies the purest expression of Friuli’s native heritage. Known also as Ribolla Nera, this ancient varietal thrives in the calcareous and clay-rich soils of Farra d’Isonzo. A wine of rare elegance and depth, it is born from a radical philosophy that rejects compromise and industrial intervention. Crafted entirely by hand, fermented with indigenous yeasts, and matured naturally on its fine lees, it captures the essence of time, place, and human dedication.
In the vineyards, every operation is manual—from pruning to harvest. The vines, propagated through massal selection, are cultivated without herbicides, pesticides, or chemical fertilizers. Irrigation is strictly forbidden, allowing each plant to find its natural balance and concentration. Grapes are harvested by hand only when fully ripe and perfectly healthy, ensuring the utmost integrity of the fruit.
Fermentation occurs spontaneously, guided solely by the natural yeasts on the grape skins. No additives, enzymes, or industrial yeasts are introduced. Sulfur dioxide is used minimally, only at bottling, and always below organic certification limits. The wine matures in large oak casks on its fine lees without filtration, clarification, or manipulation. The result is a vibrant and genuine red wine, alive with texture and character.
Tasting notes: Deep ruby red with garnet reflections. The bouquet opens with blackberry, black pepper, currant, and wild herbs. On the palate it is elegant, full-bodied, and dynamic, with silky tannins, fresh acidity, and a long, spicy finish.
Pairings: Excellent with red meats, game, braised dishes, and aged cheeses. Serve at 18°C in large glasses to enhance its aromatic complexity.

Only indigenous Friulian varieties are cultivated, ensuring that every plant remains true to its origin. No chemical fertilizers, pesticides, or herbicides are ever used, and irrigation is strictly forbidden, since water dilutes the essence of the wine. This discipline gives Bressan’s wines their unmistakable depth and authenticity.
Approach in the Cellar
