The Bressan Pignol 2011 is a legendary and rare wine, made from one of Friuli’s most ancient native grape varieties. It represents the pinnacle of the Bressan family’s radical, uncompromising philosophy. Cultivated with extreme care in the calcareous, clay-rich, and gravelly soils of Farra d’Isonzo, the Pignol is a wine of extraordinary depth and structure. Only the best vintages are produced, and every bottle is a testament to patience, respect for nature, and time.
In the vineyard, every task is done by hand: pruning, cluster selection, and harvest. No herbicides, chemical fertilizers, or irrigation are used. The vines are allowed to develop naturally, fully expressing the terroir. Grapes are picked only when perfectly ripe and healthy, ensuring maximum concentration and aromatic integrity.
Vinification follows a non-interventionist approach. Fermentation occurs spontaneously with indigenous yeasts, without additives or industrial yeasts. Sulfur dioxide is added minimally at bottling only, within organic certification limits. The wine matures for over seven years on its fine lees in large oak casks, developing complexity, elegance, and remarkable structure. Only after this extensive ageing is it bottled with a natural one-piece cork and allowed further refinement in glass.
Tasting notes: Deep garnet red with ruby reflections. The bouquet is complex and layered, revealing ripe plum, cherries, oriental spices, tobacco, cocoa, forest floor, and graphite. On the palate it is powerful, warm, and enveloping, yet refined and balanced, with velvety tannins, a strong structure, and extremely long persistence, showcasing dark fruit and sweet spice.
Pairings: Ideal with game, braised meats, roasts, and aged cheeses. Also perfect for contemplative sipping. Serve at 18°C in large red wine glasses after adequate aeration.

All tasks, from pruning to training, are performed by hand. Massal selection of vines is used, excluding clones and any genetically modified organisms. Only indigenous Friulian varieties are cultivated, ensuring that every plant remains true to its origin. No chemical fertilizers, pesticides, or herbicides are ever used, and irrigation is strictly forbidden, since water dilutes the essence of the wine. This discipline gives Bressan’s wines their unmistakable depth and authenticity.
Approach in the Cellar
The Bressan cellar is a sanctuary of purity and minimal intervention. Grapes are harvested manually at full ripeness and vinified using traditional techniques. Fermentation occurs spontaneously, driven solely by native yeasts present on the grape skins, without any synthetic additives or industrial yeasts. Sulfur dioxide is added only in minimal amounts at bottling, remaining within the strictest organic standards. The wines age on their fine lees until bottling, without filtration, preserving their natural richness, texture, and vitality.
