An elegant and structured white
Pandora 2022 is an elegant and well-structured white wine, offering balance, freshness, and aromatic complexity. Its personality comes from a carefully selected blend of white grapes grown in ValdiSole’s vineyards according to natural and respectful practices. The wine stands out for its intense bouquet, evoking white-fleshed fruit aromas, complemented by delicate floral and citrus notes that enhance both its complexity and finesse.
Vineyard origin and production philosophy
The grapes for Pandora 2022 were hand-harvested between September 7 and 18 and carefully placed in small 15 kg crates to preserve integrity and freshness. ValdiSole follows a natural, artisanal approach in the vineyard, avoiding synthetic chemicals and respecting the plant’s rhythm to produce healthy grapes rich in terroir identity. The white grape blend is designed to achieve aromatic balance, complexity, and harmony on the palate.
Vinification and aging
After destemming, the grapes undergo 2 months of skin maceration in stainless steel, a technique that imparts structure, aromatic intensity, and depth to the wine. Fermentation is spontaneous, relying solely on native yeasts, with no additives or enological interventions. Aging continues for 8 months in stainless steel, preserving freshness, minerality, and aromatic transparency. The wine is bottled with minimal sulfur addition (30 mg/L), unfiltered, maintaining its authenticity and integrity.
Tasting profile
In the glass, Pandora 2022 shows a bright, luminous straw-yellow color. The nose reveals intense aromas of white-fleshed fruit, white flowers, and subtle citrus notes, providing elegance and freshness. On the palate, it is sapid, balanced, and harmonious, with good structure and a persistent finish that highlights the blend’s complexity and the influence of the Roero soils.

History
Founded in 2015 on the Roero hills in Corneliano d’Alba, in the heart of Langhe, Roero and Monferrato, ValdiSole Winery is located in a UNESCO World Heritage Site. The winery began with a small abandoned Nebbiolo vineyard purchased online and has gradually expanded with both young and old vines. All vineyards are situated in the DOCG Roero area, primarily in the Valdistefano denomination, ensuring high-quality grapes and a strong connection to the territory.
Philosophy
ValdiSole follows strict natural practices, without synthetic chemicals or enological forcing. The winery’s philosophy emphasizes authenticity and essentiality, using only the grape as the core ingredient.
