Oxid Aging is the result of Alessandro Viola’s bold experimentation, inspired by his first attempts to create a wine with a unique character, nicknamed “50 gradi all’ombra.” Aged for seven years in chestnut casks and three years in bottle, this oxidative white is complex, elegant, and aromatic. Each sip offers a sensory journey reflecting the authenticity of Sicily. Contains sulfites.
Wine history
Oxid Aging was born from Alessandro’s desire to explore both traditional and innovative techniques. Early experiments created an iconic wine that combines Sicilian native grapes with prolonged oxidative aging. Harvest and winemaking are handled with extreme care, allowing the wine to evolve slowly and develop layered aromas.
Vineyard philosophy
Grapes come from selected vineyards, cultivated with sustainable and natural practices. Spontaneous grass cover, no chemical treatments, and attention to biodiversity ensure high-quality grapes. Optimal ripeness is essential for a structured, balanced oxidative wine full of nuances.
In the cellar
Oxid Aging follows a philosophy of minimal intervention and controlled oxidative aging. It matures seven years in chestnut casks, gaining structure, spice, and toasted notes, then three years in bottle, enhancing elegance and complexity. No invasive filtration is applied, preserving the wine’s unique personality.

Cantina Viola in Alcamo: the heart of Sicilian wine
A family story and passion
In Alcamo, halfway between Trapani and Palermo, the Viola family has always nurtured a profound bond with wine and with its land. The father of Aldo and Alessandro was a winegrower, cultivating grapes mostly for sale, yet there was always a bottle of homemade wine on the family table. That constant presence shaped the children, who later decided to transform this heritage into their own professional path. Alessandro, after graduating in oenology and viticulture, gained experience in Piedmont and on Mount Etna, two regions that deeply influenced his vision. Thus, family tradition merged with a modern approach, offering a new interpretation of Sicilian viticulture focused on authenticity and respect for the land.
Philosophy in the vineyard: nature as the protagonist
At the end of the 1990s, while Sicilian wine production was dominated by technology and the pursuit of quantity, Alessandro Viola took the opposite route. He embraced a philosophy of subtractive viticulture, where the goal is not to control nature but to let it speak freely. His vineyards, located between Contrada Fastuchera and Contrada Pietra Rinosa, reflect this idea: seven hectares farmed with natural cover crops, free of invasive chemicals, and minimal intervention. For Viola, the vineyard is not just cultivated land but a living ecosystem, where natural balances enhance the quality of the final wines.
In the cellar: essentiality and authenticity
The same philosophy continues inside the winery. Every vinification is handled with simplicity, without excessive technology or artificial adjustments. The main aim is to preserve the identity of the grapes and the uniqueness of each terroir. Varieties such as Catarratto, Grillo, Nero d’Avola, Syrah and Nerello Mascalese are transformed into wines that tell not just the story of a grape, but also of the place they come from. Spontaneous fermentation and minimal manipulation ensure wines that are sincere, expressive, and faithful to the principle of natural purity.
Territory and varietals: between limestone and clay
Viola’s vineyards are divided between two very different sites. In Contrada Fastuchera, at around 400 meters above sea level, limestone soils and the presence of Mount Bonifato bring freshness and minerality. In Contrada Pietra Rinosa, clay soils and different altitudes give structure and depth. This dual character is reflected in the wines, which combine elegance, balance, and long aging potential. Each bottle thus becomes an authentic expression of Sicily, showing what the island can achieve when nature is allowed to tell its story.
