A peasant, rebellious and vibrant white born from Marche nights
Notte in Bianco 2021 is the signature skin-contact white wine from Vini Clandestini, a rebellious and free-spirited interpretation of nature in a bottle. It comes from the hills around Offida, in the Marche region, where old vineyards grow on calcareous and clay soils, farmed entirely by hand without chemicals or machines. The grapes—mainly Trebbiano and Malvasia with small local white varieties—thrive in biodiversity-rich soils, where herbs and wildflowers live in symbiosis with the vines.
Manual harvesting happens during the coolest hours of the day, often at dusk, inspiring the name “Notte in Bianco” (White Night). The vinification is as pure as it gets: spontaneous fermentation with the skins, without selected yeasts, temperature control, fining or filtration. The wine matures on fine lees in fiberglass or stainless steel, gaining texture, complexity and depth. Sulfites are not added.
The result is a cloudy, textured and expressive white wine with subtle tannins and intense personality. Aromas of herbs, citrus peel and wild flowers meet a dry, savory and slightly oxidative sip. Notte in Bianco is the perfect pairing for spicy dishes, aged cheeses, legumes or Asian-inspired cuisine. But it also holds its own as a solo act—raw, honest, and free.

A living, uncompromising agriculture
Everything starts in the vineyard, where vines grow on calcareous and clay soils, exposed to gentle Marche slopes and Adriatic breezes. No herbicides, chemical treatments or invasive interventions are used. Manual farming and attentive observation guide the seasonal work. Indigenous varieties like Passerina, Pecorino, Trebbiano, Malvasia, and Sangiovese are the foundation of their wines, crafted either in single-variety expressions or blends, depending on the vintage and the moment’s intuition. Biodiversity plays a crucial role, with medicinal herbs grown among the vines, later used in the production of their unique vermouths.
In the cellar, spontaneous fermentations and no tricks
Winemaking follows the same philosophy: spontaneous fermentations without selected yeasts, enzymes or clarifying agents. Wines evolve naturally, aged slowly in steel or fiberglass on fine lees. No filtration is applied, and sulfites are absent or minimal. Each label reflects the vintage and the creative instinct of the winemaker. The cellar is a place of listening rather than manipulation—the wine is not “made”; it is allowed to express itself.
