Montesoro 2019 – White Wine
Overview
The Montesoro 2019 White Wine from Valli Unite is an authentic and vibrant expression of Costa Vescovato, in the heart of Piedmont’s hills. Made from local white grapes using traditional and natural methods, it reflects the cooperative’s philosophy of producing living, evolving wines that speak of place and people. Its rustic yet refined character makes it ideal for those seeking genuine, terroir-driven wines with soul and integrity.
Wine History
The name Montesoro comes from the hill overlooking the vineyards of Valli Unite, a land where biodiversity and tradition have coexisted for generations. From its first vintage, this wine has represented the cooperative’s will to give voice to native white varieties of Piedmont, often overshadowed by reds. The 2019 vintage was particularly balanced, marked by slow ripening and luminous days, resulting in grapes of great aromatic intensity and structure.
Philosophy in the Vineyard
The grapes come from organically farmed vineyards on the gentle slopes of Costa Vescovato, where clay-limestone soils and a temperate microclimate allow for gradual maturation. No chemicals or herbicides are used: the soil is nourished with home-produced organic compost and green manure of leguminous herbs to promote biodiversity and natural fertility. Yields are deliberately low to ensure concentration and purity, in line with the cooperative’s earth-centered philosophy.
Winemaking Approach
The vinification of Montesoro follows the natural rhythm of Valli Unite’s cellar. The spontaneous fermentation relies exclusively on native yeasts, while 15 days of skin maceration provide structure and aromatic depth. The wine is aged in a combination of large acacia barrels and stainless steel, balancing evolution with freshness. Sulphur addition is minimal — well below conventional limits — to maintain the wine’s vitality and expressive clarity.
Tasting Notes
Color: deep golden hue with amber reflections, a sign of extended skin contact.
Nose: layered and complex, offering ripe fruit, wild herbs and delicate resinous notes.
Palate: full and vibrant, with gentle tannins, savory tension and a long mineral finish.
Food Pairings
Excellent with Piedmontese cuisine, aged cheeses, white meats and richly spiced vegetable dishes. Its body and complexity make it perfect for creamy textures or umami-rich recipes. Serve slightly warmer than a typical white to reveal its full depth and texture.

Valli Unite
History and Origins of Valli Unite
Founded in 1981 in Costa Vescovato, a small village in the province of Alessandria, Valli Unite was born from the vision of three young farmers who decided to join forces and create an independent and cooperative farming community. Over time, that small group has grown into nearly forty members, all sharing a common ideal that goes beyond winemaking — a true cultural and human alliance. Surrounded by the rolling hills of the Tortona area, the cooperative has built its identity on agricultural independence, respect for nature, and collective work, establishing itself as a reference point for sustainable viticulture in Piedmont.
Philosophy in the Vineyard
On its 100 hectares of land, of which 22 are dedicated to vines, Valli Unite cultivates Barbera, Timorasso, Croatina and other local varieties following a strictly organic approach. The estate includes a farm with livestock, which provides natural fertilizer for the fields, ensuring the fertility and vitality of the soil. Green manures composed of leguminous herbs enrich the land and promote biodiversity. Each vineyard is tended by hand, with minimal intervention, allowing the vines to express their true character and the landscape to retain its natural balance.
Winemaking Approach
The cellar of Valli Unite is a place where wine is guided, not manipulated. Fermentations occur without selected yeasts, letting indigenous microorganisms reveal the identity of the grapes and the land. Sulphur dioxide is added only in very low quantities (less than 40 mg/l) to preserve the wine’s vitality and purity. The goal is to produce a living, evolving wine, one that changes over time and reflects the rhythm of nature. Every technical choice is guided by patience, intuition, and deep respect for the raw material.
A Community and Cultural Project
Today, Valli Unite is much more than an agricultural cooperative — it is a self-sufficient rural community that combines viticulture, animal farming, food production, and hospitality. The estate is home to vineyards, gardens, and animals, all managed by people who share the same values of sustainability, solidarity, and simplicity. Wine is just one expression of a broader way of life — a philosophy that connects land and culture, embodying the authenticity of Piedmont’s countryside.
