Hymnos White – VOI (Jason Ligas)
The impossible white: Xinomavro reimagined
Hymnos is an ode to clarity and elevation. A rare white wine made from red Xinomavro grapes, vinified with precision and minimalism. Grapes come from old vineyards on Mount Olympus, grown under permaculture principles, untouched by machinery or chemicals.
Gentle winemaking, radical mindset
The grapes undergo direct pressing, with natural fermentation in stainless steel, and no clarification, filtration or added sulfites. The goal: to capture the mineral soul of Xinomavro, revealing a white wine of alpine sharpness and unfiltered truth.
Tasting notes
HYmnos opens with subtle citrus tones, wild herbs, and smoky undertones, evolving toward a salty, stony finish. On the palate, it’s linear, bright and electric – vibrant acidity, chalk, and fresh Mediterranean greens lead the way. A white wine for minimal food or maximum contemplation.

VOI – Jason Ligas
A return to origins
After his “Sous le Végétal” project in Samos, Jason Ligas returns to his homeland: Pella, in Central Macedonia. It’s a return both physical and spiritual — rooted in a deep vision of landscape, time, and winemaking. VOI is his most personal and radical project to date, a pure reflection of territory and natural respect.
In the vineyard: permaculture and revival
Jason rents old, mostly abandoned parcels (70%) on the slopes of Mount Olympus, cultivating mostly native varieties: Xinomavro, Stavroto, and Krassato, with just one small non-native exception. Farming is based on permaculture, with no chemicals, aiming to regenerate and listen to the soil.
In the cellar: minimalism and purity
There is no intervention. Only wild fermentations, no temperature control, no fining, no filtration, and no sulfur added. The result: wines that are raw, salty, mineral, shaped by schist and rock. Powerful yet elegant, VOI is about freedom, nature, and ancestral memory.
