History and terroir
Podere Sassi is located in Tarano, in the Monti Sabini area, at about 300 meters above sea level. The vines grow on ancient soils composed of clay, sand, and silt of Plio-Pleistocene origin. This unique terroir enhances the minerality and freshness of the wines. The vineyards are cultivated without synthetic chemicals, respecting biodiversity, with manual harvesting taking place in late September.
Philosophy and winemaking
Podere Sassi’s philosophy is straightforward: only grapes, time, and patience. Evviva 2022 is crafted with a natural vinification process: a light maceration of two hours on the skins extracts delicate aromas and color, followed by a soft pressing. Fermentation is spontaneous with native yeasts, with no temperature control and no added sulfites. The wine ages in cement tanks, preserving balance and drinkability.
