ValdiSole – Enigma 2023
A fresh and harmonious Dolcetto
Enigma 2023 is a red wine made from 100% Dolcetto, entirely vinified in stainless steel to maintain agility, tension, and freshness. It offers an immediately enjoyable drinking experience while preserving elegance and subtle complexity. Its balanced structure and vibrant character make it perfect for lovers of fresh, fruit-forward wines, as well as those seeking finesse and aromatic depth.
Origins and grape philosophy
The Dolcetto grapes are hand-harvested and carefully placed in 15 kg crates to preserve freshness and integrity. ValdiSole follows a natural and sustainable viticulture approach, without pesticides or synthetic chemicals, allowing the grapes to fully express the terroir and the authentic character of the variety, while respecting the vineyard’s biodiversity.
Vinification and aging
Fermentation is spontaneous in stainless steel, with 14 days of maceration on the skins to develop color, structure, and aromatics. The wine then ages 6 months on fine lees in stainless steel, achieving balance and depth without losing freshness. Only 20 mg/L of sulfur dioxide is added at bottling, and the wine is unfiltered to preserve its natural intensity and profile.
Sensory profile
In the glass, Enigma 2023 displays a bright and lively ruby red color. The nose reveals fresh red fruits, cherry, and wild berries, complemented by delicate floral and spicy notes that enrich its complexity. On the palate, the wine is fresh, smooth, and harmonious, with delicate tannins and a pleasantly persistent finish that invites multiple sips.
Food pairings
Enigma 2023 pairs perfectly with pasta dishes with light red sauces, white meats, delicate roasts, and fresh or semi-aged cheeses. Its freshness and lightness also make it ideal for aperitifs or casual meals, highlighting the crisp fruit and authentic character of Dolcetto.

ValdiSole Winery
History
Founded in 2015 on the Roero hills in Corneliano d’Alba, in the heart of Langhe, Roero and Monferrato, ValdiSole Winery is located in a UNESCO World Heritage Site. The winery began with a small abandoned Nebbiolo vineyard purchased online and has gradually expanded with both young and old vines. All vineyards are situated in the DOCG Roero area, primarily in the Valdistefano denomination, ensuring high-quality grapes and a strong connection to the territory.
Philosophy
ValdiSole follows strict natural practices, without synthetic chemicals or enological forcing. The winery’s philosophy emphasizes authenticity and essentiality, using only the grape as the core ingredient. Wines are produced in a style that blends regional tradition with innovative techniques adapted from other parts of the world, resulting in distinctive aromas, colors, and profiles.
Wine Characteristics
ValdiSole wines are notable for their intensity and complexity, with colors and aromas that can be unconventional. The winery places special focus on orange wines, produced from white grapes fermented with skin contact. This traditional method, lasting from a few days to several months, imparts amber color, structure, aromatic complexity, and enhanced longevity to the wine.
Production and Methods
Grapes used for orange wines and other ValdiSole labels are carefully selected from minimally treated vineyards. Skin contact maceration and aging in selected vessels (stainless steel, cement, or clay amphorae) ensure wines that are intense, long-lasting, and faithful to both nature and terroir.
Vision
ValdiSole represents a contemporary and visionary approach to winemaking in Roero. The winery combines tradition, sustainability, and experimentation, producing wines that express the territory, the grape, and the company’s philosophy, delivering an authentic and distinctive experience to wine enthusiasts.
