Vineyard philosophy
Début d’Abus 2023 is made from 100% Grenache grapes, manually harvested with great care in the Rhône Valley. This cuvée reflects the estate’s minimal-intervention approach, emphasizing freshness and purity of fruit. The grapes undergo partial destemming, then spontaneous fermentation driven by indigenous yeasts.
Winemaking
Vinification and aging take place in tanks, allowing the Grenache to fully express its aromatic clarity and textural softness. The goal is a wine that remains delicate, bright, and light-bodied, with no masking from oak or additives.
Tasting notes
Pale red in color, the nose reveals fresh red fruits like wild cherry and pomegranate. On the palate, the wine is light and juicy, with notes of maraschino cherry and grenadine, supported by a lively acidity. Tannins are gentle and almost imperceptible, making for a smooth, easy-drinking profile.
Pairings & service

Maison Chastagnol is the artisanal project of Jérôme Chastagnol, a winemaker with no inherited land but a clear vision: to craft wines that are authentic, expressive, and accessible, with full respect for nature, fruit, and terroir. Located in the heart of the Drôme, southern Rhône Valley, Jérôme sources organic grapes from trusted local growers.
A journey built through hands-on experience
Before starting his own label, Jérôme trained with some of France’s most respected natural winemakers: Sylvain Bock in Ardèche, Tripoz in Mâconnais, and Yvon Métras in Beaujolais. These experiences shaped his low-intervention yet precise approach, with a strong focus on letting the vineyard speak through the wine.
Troglodyte cellar and minimal-intervention winemaking
Maison Chastagnol operates from a striking troglodyte cellar, a former quarry in Saint-Restitut, shared with two other producers. Grapes are hand-harvested and partially destemmed before undergoing spontaneous fermentation with native yeasts. Aging takes place in stainless steel tanks to preserve freshness and clarity of fruit.
Wines of clarity, generosity, and natural elegance
Jérôme’s wines strike a fine balance between drinkability and complexity. They are clean, bright, and fruity, with delicate tannins and a naturally vibrant profile. Sulfur use is minimal and only when necessary, to respect the purity of each vintage and varietal.
