Wine History
The name “Cuvée du Cyprès” is inspired by the cypress tree overlooking the vineyard, symbolizing strength and verticality. Grapes come from carefully selected Charmes-Chambertin Grand Cru parcels with a long-standing tradition of excellence. The 2022 harvest produced healthy, fully ripe grapes, resulting in a wine that is intense, complex, and true to its terroir.
Vineyard Philosophy and Winemaking
Vineyards are cultivated without systemic chemicals, respecting the natural balance. Hand-harvesting ensures strict selection of the best clusters. In the cellar, Laurent and Clément Ponsot apply “haute couture winemaking”, with spontaneous fermentations, aging in French oak barrels, and ArdeaSeal closures. In 2017, Laurent Ponsot, after leaving the historic Domaine Ponsot, embarked on a new adventure by founding his own winery together with his son Clément and a carefully chosen team. Based in Gilly-Lès-Cîteaux, in the heart of Burgundy, the estate stands at the crossroads of tradition and innovation. The project is both a Domaine, with 7 hectares of vineyards in prestigious areas, and a Maison de Négoce, selecting top-quality grapes to craft refined cuvées. With more than 26 Burgundy appellations produced, this new chapter quickly became a global benchmark, thanks to Laurent’s modern vision and meticulous attention to detail.
