History of the wine
The Bourgogne Blanc appellation represents the heart of Burgundy’s white wines: versatile, accessible, yet able to convey terroir and personality. The “Cuvée du Perce-Neige” was created to offer a fresh, aromatic, and enjoyable wine, ready to drink from the start, while maintaining high quality standards. Vineyard philosophy & cellar approach
Vines are cultivated without synthetic chemicals, with strong attention to biodiversity and natural cycles. Manual harvesting ensures only the best grapes are selected. In the cellar, fermentation is spontaneous with indigenous yeasts, and aging takes place in French oak barrels, partly new. This process enhances the depth, freshness, and finesse typical of Chardonnay in Burgundy.

In 2017, Laurent Ponsot, after leaving the historic Domaine Ponsot, embarked on a new adventure by founding his own winery together with his son Clément and a carefully chosen team. Based in Gilly-Lès-Cîteaux, in the heart of Burgundy, the estate stands at the crossroads of tradition and innovation. The project is both a Domaine, with 7 hectares of vineyards in prestigious areas, and a Maison de Négoce, selecting top-quality grapes to craft refined cuvées. With more than 26 Burgundy appellations produced, this new chapter quickly became a global benchmark, thanks to Laurent’s modern vision and meticulous attention to detail.
