Bibibulbobo 2023: Natural Skin-Contact Wine from Alsace

Vineyard Philosophy

Bibibulbobo 2023 is crafted in Eguisheim, where the Hausherr family practices a radical organic and biodynamic viticulture. The vines grow on living soils, tended only by hand or with a draft horse, preserving biodiversity and soil health. Manual harvesting ensures perfectly healthy grapes that express the full character of their terroir in a pure, handcrafted wine.

Cellar Approach

This skin-contact wine is based on Pinot Gris (80%), with Gewurztraminer and Riesling completing the blend. Grapes are harvested together and fermented on the skins for added texture and depth. Fermentation is spontaneous, with no added yeasts, and ageing takes place in large wooden casks, without added sulphites, fining or filtration. The result is an authentic, structured and vibrant orange wine.

The Hausherr winery is a family-run estate deeply rooted in the heart of Eguisheim, a charming village in Alsace. Cellar Approach

In the cellar, the care and respect for the fruit continue just as meticulously. Grapes are hand-harvested and pressed with a manual vertical press, a technique that preserves the integrity of the fruit. Thanks to the natural balance achieved in the vineyard, the musts require no chemical intervention or additives during vinification. Hausherr also stands out for the practice of complantation, an ancient Alsatian tradition of co-fermenting different grape varieties from the same lieu-dit to authentically express the terroir, going beyond simple varietal character. Their wines bear the name of the place of origin or the cuvée, ensuring a strong and recognizable territorial identity.
