Volcania Assyrtiko 2023 comes once again from the volcanic soils of Kos, where careful manual harvest at the end of September and even lower yields enhance purity and freshness. The family’s passion continues to guide every step, preserving local traditions and showcasing this Mediterranean variety with great energy.
Winery approach
After careful manual sorting, the grapes ferment spontaneously in stainless steel under strict temperature control to highlight aromas and acidity. Ageing on fine lees for seven months adds body and depth, delivering a vibrant, mineral white with remarkable aromatic precision.
Colour: pale straw yellow with greenish highlights.
Nose: intense hints of fresh citrus, wildflowers and subtle saline notes.
Palate: fresh, savoury, vibrant, with a long, pleasantly mineral finish.
