Assiolo Passito 2018
Overview
Assiolo Passito 2018 is an elegant and complex dessert wine made from late-harvested Catarratto grapes left to dry before vinification. Fermentation in stainless steel preserves freshness and varietal authenticity, balancing sweetness and vibrancy. With 15% alcohol, this passito offers both structure and warmth, making it a wine of great character. Produced with natural practices and minimal added sulfur dioxide, it expresses the purity of the fruit and the Sicilian terroir. Assiolo Passito 2018 is perfect for meditation or pairing with desserts and aged cheeses. All bottles contain sulfites.
Wine History
The name “Assiolo” refers to a small nocturnal bird of prey inhabiting the vineyards, symbolizing harmony between man and nature. The 2018 vintage was particularly balanced, with favorable weather conditions enhancing sugar and aroma concentration. The traditional drying method concentrates sugars and flavors while preserving elegance. This wine represents an ancient Sicilian tradition, reinterpreted with modern techniques and environmental respect. Assiolo Passito 2018 is the result of late harvesting and careful craftsmanship. Contains sulfites.
Vineyard Philosophy
The Catarratto grapes for this passito are grown in naturally managed vineyards, with great attention to biodiversity and minimal treatments. Late harvest allows ripe grapes full of aromas, while drying further concentrates sugars and aromatic compounds. The philosophy respects natural cycles, intervening only when necessary. Vineyard practices include soil vitality and plant health to obtain expressive, authentic fruit. Rigorous selection ensures only the best grapes reach the winery. This philosophy gives Assiolo Passito 2018 identity and originality. All bottles contain sulfites.
Winery Approach
Vinification takes place exclusively in stainless steel, enhancing Catarratto’s freshness and primary aromas. After drying, the grapes are gently pressed and fermentation proceeds slowly, balancing residual sugars and alcohol at 15% vol. Sulfur dioxide is added minimally, only for microbiological stability, preserving natural character. The result is a clean, luminous passito, transparent to terroir and vintage. Every bottle of Assiolo Passito 2018 contains sulfites.

Bosco Falconeria: Tradition and Innovation in the Heart of Sicily
Winery History
Bosco Falconeria is located 60 km from Palermo, on the gentle hills overlooking the Gulf of Castellammare. Founded in 1933 as a small 12-hectare winery, it featured seven wine presses and employed up to thirty people during harvest. Family events, the agricultural crisis, and the 1968 earthquake led to a temporary abandonment. In the 1970s, the winery was renovated as a summer retreat, marking the beginning of a new productive era.
Vineyard Philosophy
The agricultural philosophy of Bosco Falconeria is based on respect for nature and sustainability. Since the 1980s, thanks to Antonio Simeti’s dedication and Mary Taylor Simeti’s curiosity, the winery has explored organic farming practices, anticipating trends that are now essential. The return to productive cultivation was not only a gesture of passion but a concrete commitment to preserve the land, with vineyards and diversified crops now covering almost 17 hectares.
Winery Approach
At Bosco Falconeria, tradition meets innovation. Grape processing follows techniques that respect the fruit and the environment, favoring natural fermentation and minimal intervention, always focused on quality and wine integrity. The winery is a place where history merges with modern experience, and every step, from vinification to bottling, reflects an organic and sustainable approach.
The Family Today
Today, Bosco Falconeria is a family-run winery, with Natalia and her husband Rami managing operations. Erissa and Besnik, originally from Albania, together with Saverio, form the operational core of the winery, keeping tradition alive while promoting agricultural innovation. The winery represents a perfect balance between historical roots and a forward-looking vision, continuing to produce high-quality organic wines.
