Wine history: an experiment of love and patience
Amorpaz 2019 is born from a vision rooted in deep enological sensitivity and a desire to express the purest soul of Grechetto grapes. It is the result of a late harvest, which allows the plant to mature freely and slowly, building complexity and energy. In carefully chosen vintages like 2019, a natural presence of Botrytis cinerea, also known as noble rot, adds a unique dimension. The name “Amorpaz” symbolizes the spirit behind the wine: love, patience and respect for natural rhythms.
Vineyard philosophy: biodynamics and cosmic timing
The Grechetto vines grow on hills between 200 and 400 meters above sea level, rooted in ancient sandy and clay-rich soils. The approach in the vineyard is biodynamic, guided by lunar cycles, planetary movements, and biodynamic preparations to boost soil vitality. Inspired by Nicolas Joly, the farming method respects cosmic forces, helping each plant fully express itself in harmony with the environment.
Winemaking: artisanal methods and natural fermentation
Amorpaz is crafted entirely by hand with deep respect for the fruit. Grapes are harvested manually in small crates and then destemmed by hand and crushed by foot, preserving quality with gentle action. Skin contact fermentation lasts 4–5 days, followed by spontaneous fermentation in stainless steel. The wine matures for 11 months in steel, then 18 months in the bottle, with no fining or filtration, and minimal sulfites added. Born naturally balanced, it requires no enological adjustments.
Tasting notes: balance and tension
Color: intense amber with golden hues, reflecting depth and maturity.
Nose: layered aromas of dried apricot, quince, candied orange, ripe mango, fresh ginger and Mediterranean herbs.
Palate: salty and structured, with a dry, mineral and persistent finish, supported by fine tannins.
Food pairings
Amorpaz is perfect with complex aromatic dishes: aged or blue cheeses, foie gras, pumpkin-based recipes, North African tajines, or adventurous pairings with Thai or Japanese fusion cuisine. It also makes a meditation wine for reflective moments.

A story rooted in the land of Torgiano
In the heart of Umbria, nestled between the rolling hills of Torgiano and the fertile plains where the Chiascio river meets the Tiber, lies Fattoria Mani di Luna. This land, inhabited since Etruscan times, has always shown a strong agricultural vocation. Originally owned by the historic Lungarotti family, the estate passed in the 1970s to Mario Cascianelli, son of Maria Lungarotti. A lawyer by profession and a farmer at heart, Mario recognized the potential of the soil, promoting the cultivation of vines, olives, and cherry trees. Over the decades, this vision evolved into a new project, reborn in 2012 with a fresh identity.
A biodynamic rebirth: listening to nature to grow life
In 2012, three friends – Simone, Rocco, and Alessandro – joined forces to relaunch the estate, founding Fattoria Mani di Luna with the goal of converting it to organic and biodynamic farming. The name itself evokes an approach that respects lunar and cosmic rhythms. Their agricultural philosophy draws inspiration from Rudolf Steiner and Nicolas Joly, interpreting the land as a living organism with its own soul. Here, farming is not just a craft, but a way of resonating with soil, plants, and constellations, favoring balance between microcosm and macrocosm. Every action in the vineyard is thoughtful and intuitive, an expression of a deeper natural harmony.
Winemaking by hand, guided by the music of the spheres
In the cellar, everything is manual, artisanal, and respectful. Grapes are hand-harvested and carefully destemmed by hand to preserve their integrity, then gently foot-crushed in a ritual-like gesture. Fermentations occur spontaneously, guided by native yeasts using the pied de cuve method. All operations follow lunar calendars and cosmic indications, avoiding any kind of clarification or filtration. The wine is aged in glass-lined concrete, stainless steel tanks, and experimental clay amphorae. Sometimes, quartz crystals are used during ageing to refine aromas and give a unique energetic identity to the wines. Wine here becomes a living expression of place, time, and human connection.
