This red represents an extreme synthesis of the Sete philosophy: embracing difficulty as an integral part of the agricultural narrative and transforming it into identity. Each bottle preserves the meaning of a harvest that refused shortcuts, choosing instead the path of expressive truth and depth.
Vineyard philosophy
In the vineyard, Quello che rimane is the result of rigorous and respectful work, carried out with maximum attention to vine balance. The grapes are followed throughout the growing cycle with an approach based on observation and minimal intervention. In a demanding climatic context, the priority was to preserve fruit health and integrity, accepting low yields and unforced ripeness. The result is fruit that concentrates not only substance, but also the memory of the soil and the vintage.
Cellar approach and grape variety
Quello che rimane Rosso 2023 is produced from 100% Ciliegiolo grapes, vinified through an essential and coherent approach. Skin maceration lasts five days, accompanied by manual punch-downs to ensure measured and conscious extraction. After gentle pressing with a pneumatic press, the wine ferments and ages exclusively in stainless steel, without any contact with wood, preserving a pure reading of both grape variety and vintage. Human intervention is minimal, aimed at supporting the wine without ever overpowering it.

Sete Winery
The history of the Sete project
Sete Winery was founded in 2013 in Priverno, in the heart of the Amaseno River valley, in the province of Latina, from a shared idea by Emiliano Giorgi, Arcangelo Galuppi, and Martina D’Alessio. From the very beginning, the project set itself a clear and ambitious goal: to give voice to a territory that has often remained on the margins of Italy’s wine narrative, despite its extraordinary natural strength. Here, between the Pontine Plain and Ciociaria, just a few kilometers from the Circeo National Park, the landscape is a constant balance between sea and mountains, wind and sun, humidity and light. Sete was born as a contemporary response to an ancient agricultural history, with the aim of restoring dignity and centrality to historic vineyards and local grape varieties that had long been overlooked.
Vineyard philosophy
Sete’s agricultural philosophy is based on a deep and radical respect for nature and its rhythms. The estate works approximately five hectares of vineyards divided into twelve separate parcels, many of which are planted with vines over fifty years old, true genetic heritages of the area. These vineyards are farmed according to certified organic principles, with minimal intervention and a strong focus on soil vitality. Manual work plays a central role, together with constant observation of the vineyard, considered a complex and living ecosystem. Indigenous varieties such as Ottonese (Bombino Bianco), Moscato Bianco, and Malvasia Puntinata find here an ideal environment to express character, identity, and depth.
The approach in the cellar
In the cellar, Sete follows a coherent and rigorous approach based on the idea of non-interference with what the grapes naturally express. Each parcel is vinified separately to preserve its specific traits, through spontaneous fermentations with indigenous yeasts and without the use of additives or oenological processing aids. No technical corrections or standardizing interventions are applied: the wine follows its natural path, guided by time and internal balance. This production method results in living, dynamic wines, capable of evolving and honestly telling the story of their vintage and place of origin, without filters or masks.
Identity, territory, and vision
The Sete project is perfectly summarized by the motto “Nothing to add”, a declaration of intent that goes beyond technique and becomes a cultural vision. Wine is not conceived as a product to be constructed, but as a living food, the direct expression of healthy and conscious agriculture. Each bottle reflects the dialogue between soil, climate, and human hands, without shortcuts or compromises. Sete interprets natural wine as a tool for territorial storytelling and as an agricultural act even before an oenological one, helping to redefine the wine identity of southern Lazio with authenticity, coherence, and depth.
