Wine Overview
Zibimbo 2022 from Abbazia San Giorgio is a natural dry white wine that captures the authentic essence of Pantelleria. Made from 100% Zibibbo (Muscat of Alexandria), organically and biodynamically grown, it expresses the volcanic minerality of the island’s soils and the freshness of Mediterranean winds. Zibimbo contains naturally occurring sulfites, with no added sulfur.
History and Philosophy
Founded in 2015 by Battista Belvisi and Beppe Fontana, Abbazia San Giorgio is devoted to reviving native grape varieties and crafting wines that convey the identity of Pantelleria. Zibimbo represents the dry interpretation of Zibibbo, highlighting freshness, salinity, and Mediterranean character, moving away from traditional sweet styles.
Vineyard Philosophy
The vineyards are located in Khamma, eastern Pantelleria, planted on terraced volcanic soils overlooking the sea. The alberello pantesco training system (UNESCO heritage) is used. No chemicals, pesticides, or artificial fertilizers are applied. Biodynamic practices and minimal manual interventions maintain and enrich the local ecosystem.
Winery Approach
Vinification follows a minimal intervention philosophy: spontaneous fermentation with native yeasts, brief skin contact to enhance aroma and structure, and aging in stainless steel to preserve freshness and integrity. No fining, no filtration, and no added sulfites are used.

Color: bright golden yellow with amber reflections.
Nose: orange blossom, citrus peel, dried apricot, Mediterranean herbs, subtle spices.
Palate: fresh, mineral, savory, with structure and a long, persistent finish reminiscent of the sea and Mediterranean landscapes.
Pairs perfectly with shellfish, grilled fish, fish couscous, fresh goat cheeses, and Mediterranean salads. Serve at 12°C.

Winery History
Abbazia San Giorgio was founded in 2016 in Pantelleria by two friends, Battista Belvisi and Beppe Fontana, who wanted to create a wine that expressed the island’s identity. Their goal was to craft intense, distinctive wines in which the producer’s sensitivity acts as a spokesperson for the territory. The founders drew on traditional knowledge and experience from historical vineyards on the island.
Vineyard Philosophy
The vineyards cover 3.5 hectares in the Khamma district, one of the greenest areas on Pantelleria’s eastern side, with terraces overlooking the sea. Volcanic soils host mainly Zibibbo and Pignatello (Nivuro Nostrale), and to a lesser extent Carignano, Catarratto, and Nerello Mascalese. The traditional alberello pantesco training system, a UNESCO heritage, is used. No chemical products are applied; wild herbs are buried at the end of winter, promoting natural soil fertility.
Winemaking Approach
The natural philosophy continues in the cellar. Vinification relies solely on indigenous yeasts, without invasive interventions or additives, including sulfur dioxide. Every stage of production preserves authentic aromas and freshness, producing wines that evolve in the glass and convey the character of the territory even days after opening.
