La Nuvola di Piè was created from Agricolavinica – Le Colline di Ripa’s desire to preserve and enhance traditional techniques associated with the production of great dessert wines. The name evokes a poetic and evocative dimension, reflecting the lightness and elegance that define this wine. Vineyard Philosophy
The grapes destined for La Nuvola di Piè are harvested at optimal ripeness to preserve the full aromatic potential and natural acidity of the varieties. Moscato and Rhine Riesling thrive in the hills of Molise, where favourable growing conditions allow them to develop intense aromas and remarkable complexity. Vineyard management is focused on producing healthy, balanced grape clusters capable of undergoing the subsequent drying process without losing quality or integrity. This approach allows sugars and aromas to concentrate while maintaining the freshness necessary to ensure harmony in the finished wine.
Winemaking and Ageing
After harvest, the grapes are carefully placed on drying racks inside an old farmhouse located near the vineyards, where natural appassimento takes place for approximately 40 days. During this period, the berries gradually lose water, concentrating sugars, aromas and flavour compounds. Once the drying process is complete, the whole bunches are gently pressed using a traditional hand-operated press, helping preserve the purity and quality of the must. Fermentation takes place in stainless steel tanks, followed by 10 months of ageing in the same vessels. This production method results in an elegant and complex passito wine, perfectly balancing sweetness and freshness.
